Colorful Coleslaw

This tasty side dish goes well with meat -- from barbecued beef to meat loaf.

TOTAL TIME: 15 minutes plus chilling
NUMBER OF SERVINGS: 4
INGREDIENTS:
1 cup shredded green cabbage
1 cup shredded red cabbage
1/2 cup shredded Napa cabbage, or other cabbage as available
1/2 cup shredded carrots
1/4 cup low-fat mayonnaise
1/2 tablespoon deli or Dijon mustard
1 tablespoon red wine vinegar
1/2 tablespoon sugar
Salt and pepper to taste
DIRECTIONS:
1. Combine all ingredients in a large bowl and toss well. Refrigerate at least 1 hour.

2. To serve: Divide into 4 equal portions (cupped hand) and refrigerate extra. (Cabbage wilts and "shrinks" down when marinated.)
