Lemon Mousse With Strawberries
This cloud-light lemon dessert makes a festive finish for a gala meal.

COOKING TIME: 5 min. + chilling

INGREDIENTS: 1 pint strawberries
1 packet unflavored gelatin
1/2 cup cold water
3/4 cup sugar
2 teaspoons grated lemon zest
1/2 cup fresh lemon juice
1 tablespoon extra-light olive oil
1 large egg
1 1/3 cups plain fat-free yogurt

DIRECTIONS: 1. Core strawberries and slice thickly.
2. Sprinkle gelatin over 1/4 cup cold water in small bowl. Let stand 5 minutes to soften.
3. Whisk together remaining 1/4 cup water, sugar, lemon zest, lemon juice, oil, and egg in medium saucepan until well combined. Cook over low heat, whisking constantly, until mixture is hot, about 5 minutes. Whisk in softened gelatin and cook, whisking constantly, until gelatin has dissolved, about 1 minute.
4. Remove from heat, transfer to medium bowl, and cool to room temperature, whisking occasionally. Whisk in yogurt. Alternately layer strawberries and lemon mousse in 8 dessert bowls and chill until set, about 3 hours. One serving equals one bowl.

Tips: Cook's Clue
Let no lemon go unzested! When you're squeezing lemons for lemonade or other recipes, take a moment to grate the zest before you cut the lemons. Wrap the zest in plastic wrap and freeze it until needed.
