Lemon Chicken Tacos
Quick & Easy!
It's easy to eat healthy when these yummy tacos are on the menu.
PREPARATION TIME: 20 minutes plus marinating
COOKING TIME: 10 minutes

INGREDIENTS: 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
2 tablespoons plus 1 teaspoon fresh lemon juice, divided
2 teaspoons olive or canola oil
1 large onion, sliced
1 scallion, sliced
2 garlic cloves, minced
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
2 plum tomatoes, seeded and chopped
1/4 cup minced fresh cilantro or parsley
8 (8-inch) flour tortillas, warmed
1 cup shredded lettuce
1/2 cup salsa |

DIRECTIONS: 1. Place chicken in a large resealable plastic storage bag; add 2 tablespoons lemon juice. Seal bag and turn to coat; marinate in the refrigerator 1 to 2 hours.
2. Heat oil in a large nonstick skillet. Add onions and garlic; cook until softened. Add the chicken, cumin, salt, and pepper. Cook, stirring occasionally, 4 minutes or until juices run clear. Remove from heat; stir in tomatoes, cilantro, and remaining 1 teaspoon lemon juice. Spoon onto tortillas; top with lettuce. Serve with salsa.

Tips: "I tried these last night. YUMMY! Actually, I substituted ground turkey breast for the ground chicken and it was absolutely delicious. I increased the seasonings some because ground turkey tends to be a little flavorless. We loved them. I may never make ground beef tacos again!"

"FAST and good! This is a nice recipe to pack to work. Microwave the filling, put the tortilla on top for a few seconds and you're set. I usually have the 2 for dinner and take just 1 for lunch with a salad or some fruit or a dessert treat!"
