Chocolate-Dipped Strawberries
An elegant and simple dessert that's bound to impress your guests-and you.
TOTAL TIME: 15 minutes plus chilling

INGREDIENTS: 1 pint strawberries, rinsed and dried completely
4 ounces (2/3 cup) semisweet chocolate chips |

DIRECTIONS: 1. Line a baking sheet with parchment paper.
2. Place chips in a microwaveproof bowl and microwave on Medium 30 seconds, or until melted into a thick liquid. Stir well.
3. Using a fork or strawberry stem, dip each strawberry into the chocolate, allowing excess chocolate to drip back into bowl. Gently place dipped strawberry on lined baking sheet.
4. When all strawberries have been dipped, place baking sheet in refrigerator and chill until chocolate hardens, about 30 minutes. One serving equals 1 strawberry. Refrigerate leftovers. (Can be stored in refrigerator up to 24 hours.)
Note: You can also use banana slices, dried apricots, or dried pears instead of strawberries.

Tips: About the Health Benefits of Chocolate
Chocolate and health...you think we're kidding, right? Well, researchers have been turning up evidence that chocolate, like many other plant foods, contains antioxidant compounds called flavonoids that can help reduce high blood pressure and keep fats in the blood from clogging arteries.
One study at Pennsylvania State University found that eating chocolate helped lower levels of LDL ("bad") cholesterol. Cocoa powder is richest in flavonoids, followed by dark chocolate and then milk chocolate. And it contains other ingredients -- in tiny amounts, to be sure -- that can boost energy, smooth out anxiety, and reduce pain. Small wonder that it's one of the world's favorite comfort foods.
Still, no one claims that chocolate is medicine. You eat it for pleasure, and it's nice that it helps more than it harms-as long as you eat with restraint. Chocolate does contain lots of calories, about 150 per ounce of dark or milk chocolate, so the best word for it besides "delicious" is: Moderation.
