Pasta With Red Pepper Sauce
Preparing the sauce while the pasta cooks makes this a quick and easy meal.

INGREDIENTS: 8 ounces fusilli pasta
3 garlic cloves
2 cups jarred roasted red peppers
1/2 cup chicken broth
2 tablespoons tomato paste
1 tablespoon olive oil
1/4 teaspoon freshly ground pepper
2 tablespoons freshly grated Parmesan cheese |

DIRECTIONS: 1. Cook pasta according to package directions; drain.
2. Meanwhile, blanch garlic in a small saucepan of boiling water 2 minutes, peel. Purée the garlic, red peppers, chicken broth, tomato paste, olive oil, and ground pepper in a food processor. Toss with hot pasta and sprinkle with Parmesan. Serve immediately.
