Broiled Flounder With Herb Butter
Quick & Easy!
This tasty fillet of flounder is a health-conscious cook's answer to fast food.

INGREDIENTS: HERB BUTTER
2 tablespoons unsalted butter, softened
2 teaspoons reduced-fat cream cheese (Neufchâtel)
1 tablespoon snipped fresh dill
1 teaspoon snipped fresh chives or scallion greens
1 teaspoon drained horseradish
1/2 teaspoon grated lemon zest
FLOUNDER
4 flounder fillets (6 ounces each)
2 tablespoons fresh lemon juice
1/4 teaspoon salt |

DIRECTIONS: 1. Heat broiler.
2. Make Herb Butter: Beat butter and cream cheese together with a spoon in a medium bowl until well combined. Stir in dill, chives, horseradish, and lemon zest; set aside.
3. Sprinkle flounder with lemon juice and salt. Broil 6 inches from heat, without turning over, until flounder is cooked through, 5 minutes. Top with Herb Butter and serve.

Tips: Remove the fish from the pan as soon as it's done, or it may overcook from the heat of the pan.
