Cajun-Style Grilled Shrimp
Hot and spicy, this southern shrimp dish is easy to make and sure to satisfy.
PREPARATION TIME: 25 minutes plus marinating
COOKING TIME: 5 minutes

INGREDIENTS: 1 1/2 teaspoons dried oregano
1 teaspoon granulated sugar
3/4 teaspoon dried thyme
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1 1/2 pounds large shrimp, peeled and deveined
1 1/2 teaspoons vegetable oil
1/3 cup ketchup
2 tablespoons plus 2 teaspoons red wine vinegar
3/4 teaspoon packed light brown sugar
1/2 teaspoon ground ginger
2 cups frozen corn kernels, thawed
2 scallions, thinly sliced |

DIRECTIONS: 1. Combine oregano, granulated sugar, thyme, salt, black pepper, and cayenne in a medium bowl. Add shrimp and oil, tossing to coat. Cover and marinate in the refrigerator 30 minutes.
2. Meanwhile, combine ketchup, vinegar, brown sugar, and ginger. Stir in corn and scallions.
3. Heat broiler. Broil shrimp 6 inches from heat 4 minutes, until cooked through, turning once. Toss hot shrimp with corn mixture.
