Lime-Ginger Cheesecake

Tangy and delicious describe this Italian-inspired ricotta cheesecake.

PREPARATION TIME: 10 minutes plus chilling
COOKING TIME: 6 minutes
NUMBER OF SERVINGS: 12
INGREDIENTS:
CRUST
Vegetable cooking spray
1 tablespoon unsalted margarine
4 zwieback toasts, finely ground, or 3 tablespoons fine dry breadcrumbs
1 teaspoon loosely packed light brown sugar
1/2 teaspoon grated lime peel
1/4 teaspoon ground ginger

FILLING
3 tablespoons fresh lime juice
2 envelopes unflavored gelatin
2 cups part-skim ricotta cheese
1 cup plain low-fat yogurt
1/2 cup loosely packed light brown sugar
1/2 cup skim milk
1 large egg yolk
1 teaspoon grated lime peel
3/4 teaspoon ground ginger
DIRECTIONS:
1. Make crust: Coat an 8-inch springform pan with cooking spray; set aside. Melt margarine in a small saucepan or skillet over low heat. Remove from heat and mix in zwieback crumbs, brown sugar, lime rind, and ginger. Press the mixture evenly into bottom of prepared pan and refrigerate while making the filling.

2. Make filling: Place lime juice in a small heatproof glass measuring cup, sprinkle gelatin over top and let stand at room temperature about 5 minutes, until softened. Bring 1 cup water to a simmer in a small shallow saucepan over medium-high heat. Reduce heat to low and place the measuring cup in the gently bubbling water; stir until gelatin dissolves completely, about 4 minutes. Remove from heat and set aside.

3. Combine ricotta, yogurt, brown sugar, and milk in a blender or food processor; whirl until smooth, about 1 minute. Add egg yolk, lime rind, and ginger; whirl about 1 minute to blend. Add cooled gelatin mixture and whirl 15 seconds more.

4. Gently pour filling over crust in springform pan and refrigerate at least 5 hours or overnight, until set.

Per serving: Calories 135, fat 5 g, saturated fat 3 g, cholesterol 32 mg, sodium 93 mg, carbohydrate 15 g, fiber 0 g, protein 8 g.

Tips:
For an easier prep, grate the lime peel before you cut the lime.
