Guilt-Free Pepperoni Pizza
Pizza without guilt? Oh yes! The secret is using lean turkey pepperoni and part-skim mozzarella. The result is nothing short of terrific.

INGREDIENTS: Vegetable cooking spray
5 ounces white mushrooms, trimmed and sliced
1 large onion, cut into thin wedges
2 garlic cloves, minced
2 teaspoons fresh oregano or 1 teaspoon dried
1/4 teaspoon salt
4 plum tomatoes, sliced
2 teaspoons balsamic vinegar
1 package (10 ounces) refrigerated pizza dough
3/4 cup pizza sauce
1 ounce turkey pepperoni (about 16 slices)
1 cup shredded part-skim mozzarella cheese
3 tablespoons chopped fresh flat-leaf parsley |

DIRECTIONS: 1. Arrange oven rack in center of oven. Heat oven to 425°F. Line a 12-inch pizza pan or 15 x 12-inch baking sheet with parchment paper.
2. Lightly coat a large nonstick skillet with cooking spray and heat over medium-high heat. Add mushrooms, onion, garlic, oregano, and salt; sauté until mushrooms are golden brown, about 7 minutes. Stir in tomatoes, sprinkle with vinegar, and cover. Remove from heat and let stand 3 minutes.
3. Meanwhile, shape crust on parchment paper according to package instructions. Spread on pizza sauce. Top with vegetables, pepperoni, mozzarella, and parsley.
4. Bake until crust is golden brown and crisp and cheese is melted and bubbly, about 10 minutes.
