Cider-Braised Ham with Yams and Apples

Whether you're making a Sunday family dinner or a festive holiday meal, this fragrant and flavorful dish is sure to delight your dinner companions.

PREPARATION TIME: 10 minutes
COOKING TIME: 25 minutes
NUMBER OF SERVINGS: 4
INGREDIENTS:
1 tablespoon Dijon mustard
1 tablespoon finely chopped peeled fresh ginger
1/2 teaspoon ground cloves
1 cup plus 1 tablespoon apple cider
1 yam or sweet potato, peeled and cut into 1/8-inch thick slices
1 pound lean ham steak
1 Granny Smith apple, peeled, cored, and cut into 12 wedges
1 tablespoon cornstarch
1/2 diagonally slice green parts of scallions
DIRECTIONS:
1. Stir together the mustard, ginger, cloves and 1 cup of the cider in a large skillet. Bring to a simmer and add the yam. Cover tightly and simmer until partially tender, 15 minutes.

2. Add the ham steak and cover with the yam slices. Arrange the apple wedges on top. Cover and simmer until the apple and yam are tender and the ham is heated through, 10 to 15 minutes.

3. Meanwhile, stir together the cornstarch and the remaining one tablespoon of cider in a small bowl until well blended.

4. With a slotted spoon, transfer the ham, yam, and apple to a platter. Cover the foil to keep warm.

5. Stir a little of the hot pan juices into the cornstarch mixture until smooth. Add to the skillet and cook, stirring over medium heat until slightly thickened, about 1 minute. 6. Divide the ham, yam, and apples among 4 plates. Spoon the skillet on top and garnish with the scallions.
