Crab and Artichoke Rice Skillet
Here's a perfect one-dish meal that will shake up your quick-and-easy meal routine.

INGREDIENTS: 1 tablespoon olive oil
3 cloves garlic, minced
1/2 medium green bell pepper, chopped
1 medium onion, chopped
2 tablespoons chopped parsley
1 1/2 cups spaghetti sauce or tomato sauce
1 can (13 ounces) artichokes, drained, liquid reserved, and quartered
1/2 can black olives (about 30), drained and liquid reserved
1 package (8 ounces) imitation lump crabmeat
4 cups cooked brown or white rice

DIRECTIONS: 1. Heat the oil in a large skillet. Add the garlic, pepper, and onion and sauté until softened.
2. Add the parsley, spaghetti sauce, artichokes (with liquid), olives (with liquid), and crab.
3. Cook over medium heat until hot. Stir in the rice.
